I think this caused by low priority of mounted content.
well, the addon system was made to ADD stuff not override it (I could make it overrideable but that could slow down oc pretty fast which was the reason why garry removed it from gmod's addon system)
I'll think about it... but for now, you can't.
Can you made an option (in info.txt), that will make content of folder is more priority than mod's content?
I bet a few overrided models will not slow down oc too much.
